METHOD

Introduction

Through this post, i put some method for the ayam penyet dishes. so here, i'll show you how to cook and dressing the ayam penyet and the Sambal as well.

METHOD



  1. Combine all ingredients in pot except for chicken and oil. Mix well and taste. Add chicken with enough water to cover the chicken.
  2. Place pot on stove. Cook over medium heat for 15-20 minutes until chicken cooked. Take meat out. Drain and cool it.
  3. Strain the soup. Clear broth will be used for soup. Use the remaining strained cummin and coriander seeds to marinate the chicken.
  4. Add a little broth to the boiled and cooled chicken. Store it in the fridge.
  5. Deep-fry chicken in oil over medium heat till cooked through and lightly golden brown. Drain in a sieve lined with paper towels. Smash the chicken thigh with a wooden mallet.
  6. To serve: Spoon a bowl of Jasmine or Chicken rice on a plate. Garnish the rice with spring onions or coriander. Place one chicken thigh, 2 slices fried tempeh, 2 slices fried beancurd, some salad and sliced cucumber onto the plate and drizzle some kalamansi juices over them.
  7. Spoon sambal assam onto the side of plate.
  8. Fill a small bowl with the chicken soup. 
  9. Serve hot.

How to make Sambal


Ayam Penyet (Smashed Fried Chicken) my family favourite. We often order this dish when we dined out. Thanks to my mom who always know how to whip this dish. Ayam Penyet is more "kick" to eat with this sambal. Now I'm happy to share with all readers of my recipe blog. Sincerely from our heart....Recipe for Sambal Ayam Penyet.

Ingredients

1/2 kilo red and green chilli
$2 chilli padi
6 onions
10 cloves garlic
1 1/2 round belacan, you can easily find it at the local supermarket or wet market
8 tomatoes, dice
20 limau sambal, cut into half
Sugar
Ajinomoto
Salt to taste
Water
Cooking oil

Method

Grind red and green chilli, chilli padi, onions, garlic and belacan. Make sure to add in water before you grind. Heat about 6 tblspns of cooking oil. Add the grind ingredients. Let it cook until oil is form on the surface and the paste is slightly dry for about 10 minutes. Stir occasionally so it will not overcooked or dried up. Add in sugar, ajinomoto and salt to taste, please adjust to your taste. Add in the tomatoes and limau sambal. Stir again and let it cook for another 5 minutes, stir occasionally again. Done.

AYAM PENYET RECIPE

INTRODUCTION

Here the recipe of Ayam penyet which is included with images and ready with the ingredients.  



Sambal
RECIPE

  • 6 pieces chicken thighs (rinse and drain well, do not throw the skin).
  • Enough water to cover chicken (wash chicken and drain well. Prick chicken all over with a fork)
  • 3 lemongrass, only the white portion, crushed.
  • 120 g galangal, peeled and sliced
  • 6 cloves garlic, pounded
  • 2 cm knob tumeric, pounded
  • 1 tbsp coriander seed , pounded (fry coriander seed over slow fire till fragrant then grind coarsely)
  • 1/2 tbsp cummin seeds (jintan manis)
  • 1 thumbsize ginger, pounded
    Ayam penyet dressing with salads.
  • 4 daun salam (Bay leaves)
  • 4 tbsp brown sugar
  • 2 tbsp salt
  • oil for deep frying
Ready to eat!!!

Ayam Penyet
Ayam Penyet (smashed fried chicken) is an indonesian dish consisting of fried chicken that is then smashed to make it softer, sambal, cucumbers, fried tofu and tempeh. It has recently surged in popularity across South East Asia, Where various chain of franchises has opened selling the dish along with other Indonesian delicacies.
It is also known for its spicy sambal, which is made with a mixture of chilli, anchovies, tomatoes, onions, garlic, belacan, assams and lime juice. Like it namesake, the mixture is then smashed into a paste to be eaten with the dish.




Most popular Ayam penyet in Brunei

The most popular ayam penyet in brunei is Gerai mak siti which is located in capital city Bandar Seri Begawan. this ayam penyet actually from indonesian food culture. they serve with sambal pedas and sambal biasa and also Vege' on the side. Ayam Penyet epic was completed at Gerai Mak Siti, on Simpang 178-16, Kampong Kiarong. It can be seen from the highway, on the left as you pass RIPAS before Jame'. The Gerai is in someone's garden, with twinkling fairy lights and an absence of fluorescence. Seating is in a cosy wooden structure. It is, if anything, a gerai for dating. Ayam Penyet was $3.00, Coke was $1.00, economical.
